All you need are a few simple ingredients that somehow come together perfectly to create this crazy-delicious dish! The steps are pretty easy too. Simply fry the chicken strips until golden on each side and place in a baking dish. Next you will saute the onions, garlic and mushrooms in the same skillet and scoop them over the chicken. And finally, prepare the cheesy sauce, once again in the same skillet, and pour it on top. Cover tightly and bake!
Note that if you opt to use a disposable aluminum 9×13 baking pan, there is only one skillet to wash when you are done!! But of course, bring out those glass or ceramic baking dishes for a healthier and even possibly a more flavorful experience!

CREAMY CHICKEN AND MUSHROOM CASSEROLE

WHAT YOU WILL NEED:
chicken breast strips, 2 lbs
olive oil, 6 tablespoons
fresh mushrooms, 24 ounces, sliced
yellow onion, 1/2, diced
minced garlic, 2 tablespoons
Salt and pepper to taste
CREAM OF MUSHROOM SAUCE:
cream of mushroom, 1 can 15 ounces
cream cheese, 4 ounces
butter, 4 tablespoons
milk, 1 cup
flour, 2 tablespoons
egg noodles, 12 ounces
HOW TO MAKE IT:
Preheat oven to 350 degrees.
Season chicken strips with salt and pepper.
Heat large skillet over medium-high heat, add 2 tablespoons of olive oil and add 5-6 chicken strips, as much as the pan will allow without overcrowding.
Cook chicken, turning after 2-3 minutes, until a nice golden brown on each side.
Place all cooked chicken strips in a 9×13 glass baking pan.
Repeat with remaining chicken strips and 2 tablespoons of olive oil.
Using the same skillet add 2 tablespoons olive oil. Add onions, garlic and mushrooms and cook until onions are transparent.
Add cooked onions and mushrooms on top of chicken strips.
Using the same skillet, melt 4 tablespoons of butter over medium-high heat. Stir in flour until combined.
Add in milk, continuously stir until it starts to boil.
Add in cream cheese and cream of mushroom, stir until creamy and smooth and no visible chunks. Remove from heat and pour over mushrooms and chicken.
Cover with foil and bake for 20-25 minutes.
Broil on high for 2-3 minutes to give a nice golden top.
Serve over rice or egg noodles (cooked per package directions).
